Fruit of My LOINS

Easiest Pork Loin Ever:  In case you don't know, pork is the other white meat.  It's quite lean and when cooked right man it's tasty (you're missing out jews/muslims/sieks/vegans).  Anyway, my mom makes really good loins, in which she usually stuffs the middle with lots of calories; last night we opted for a less fatty approach.

Our Loin recipe (took 5 minutes, looked like it took all day)
2 lb Pork loin
3 chopped carrots
3 chopped celery
Some onions (whatever other veggies you have laying around)
4 cups red wine
2 sticks butter
salt/pepper/seasoning I bought from Marshall's

My mother rubbed the pork with pesto, then we marinated the sucker in wine and butter (yum) and added the veggies for a stew like broth.  We didn't have fennel, but we decided after it would be a great add in.

Cook for 50 minutes on 400 in a stew-like bowl/dish (now loins cook quick, so what it and don't cook for too long or it tastes like shoe leather)

Fruit of thy loins: Slicked pork with the stew like broth on top and sauteed green beans and almonds. JOY
