Mixed Fruit Granola



3 cups uncooked regular oats
1/2 cup wheat germ
1/2 cup sunflower kernels
1/2 cup chopped pecans
1/2 cup honey (mine was home grown from my Dads honey bees)
1/4 cup sesame seeds (I used chia seeds)
2 tablespoons vegetable oil
1/2 tablespoon ground cinnamon
1 1/2 teaspoon vanilla extract
1 1/2 cups chopped mixed dried fruit ( I used cranberries, blueberries and cherries)
1/2 cup crystalized ginger

1.) Combine first 9 ingredients in a bowl; spread evenly on 2 lightly greased cookie pans.
2.) Bake at 350 degrees for 25-30 minutes, stirring every 7 minutes.  Cool.  Stir in dried fruit.
3.) Store in an airtight bag for up to two week
 



I got this recipe out of a southern living magazine but added my own little flares to it.  I used chia seeds instead of sesame seeds and also added crystalized ginger.  This granola is so delicious in greek yogurt with fruit for a little sweet extra crunch that we all crave.  I also ate this granola like cereal with almond milk and it was amazing!  I highly recommend this recipe due to how yummy it is and how simple it is to make.  Bon appetite!
